We started by making coconut cupcakes with an island inspired coconut banana buttercream. As for the cake, we decided to make an absolutely delicious peanut butter mousse for a peanut butter and jelly cake. We layered vanilla cake with the pb mousse, and (seedless) raspberry jam and raspberry buttercream. We fashioned marshmallows in the shapes of a giraffe and an elephant in honor of her upcoming African voyage for on top of the cake.
